Finally i had a chance to write my blog.. the reason behind this delay was actually my newborn baby! Yes, now Zurich_eats has 3 members and i can say that he loves to eat and watch his mom cooking delicious food 🙂
Since i don’t have lots of free time, i try to make simple and quick recipes at home and this vegan bowl is one of them. We love it and i am sure you’ll like it too!
- 1 cup of boiled bulgour / quinoa or rice
- Grilled cherry tomatoes
- Grilled mushrooms
- Caramelized onions ( recipe below)
- Olive oil & salt
The recipe is quite simple and the most important thing is to prepare the caramelized onions.
Caramlized onions – my way:
If you prepare this recipe for 1 person, then take 1 medium size onion.
Slice it and put it in a pan with little bit of olive oil.
Cook them until they are softened.
Then add 1 big spoon of balsamic vinegar and little bit of salt & sugar.
Cook the onions until they caramelized and add it on to your vegan bowl. I really like this recipe and i often use those onions on my homemade pizza as well 🙂
