I created this recipe with the leftovers in my fridge and it turned out so good that I would like to share it with you.
I love this kind of easy and fresh salads. They are tasty and with full of good vitamins.
Ingredients – for 2
- 1 cup of boiled mexican beans
- 1 cup of boiled pasta – here i used the vermicelle pasta but you can add different types as much as you want.
- 4 Grated carrots
- some pickled cucumbers
- lots of chopped parsley
- for the sauce i only added fresh lemon juice, salt and olive oil.
As you can imagine, the recipe is quite easy. Mix everything in a bowl and serve it cold.
