Green Beans with Olive Oil & Tomato Sauce



Another great recipe from my mom’s kitchen! This one is a top summer dish because you can serve it cold! During the hot summer days, my mom used to cook this almost every week and now it is my time to try at home 🙂


Preparation Time: 15 mins if you have a pressure cooker if not it will take 45 mins to cook

Level: Easy – serves 4 -6  people


  • 500 gr of long green beans, trimmed
  • 1 table spoon of tomato paste
  • 3 tomato – grate them to have the sauce
  • 2 medium onion, chopped
  • 1 garlic clove, chopped
  • 1 sugar cube ( or one teaspoon of sugar)
  • 1,5 cup of water ( if you use a pressure cooker, you don’t need to add water cause the tomatoes will give all their juice)
  • 4 table spoon of olive oil
  • Salt & Pepper

Wash the green beans and start cutting them from the middle. Some may like to use the whole beans but I like to cut each green bean into two 🙂

For this dish, I used my pressure cooker which is a magic thing! You can prepare all dishes in 15 mins! Isn’t it great?

So, if you have a pressure cooker; add all the ingredients ( no water!) and let it cook 15 mins. Then your dinner is ready!

If you don’t have a pressure cooker, then take a deep pan, first add the onions and olive oil, let them stir for 1 min.

Then add all the ingredients and start cooking the green beens over a medium heat for 45 mins. After 30 mins check your beens if they are very soft then you can turn off the heat, if not keep cooking until the beens are ready.

As I mentioned above, you can serve this dish cold and keep it in fridge for 3 days! 🙂
