Grilled Halloumi Salad with Grilled Veggies


As we are facing hot summer days in Zurich, the only best thing is to eat fresh salads for dinner!

I don’t know if you ever used Halloumi cheese, but this is a very quick and delicious salad recipe that you can prepare it under 20 mins!


Preparation Time: 15-20 mins

Level: Easy – 2 person


  • 1 Pocket of rocket (arugula) salad
  • Halloumi cheese
  • 1 tomato
  • 1 zucchini
  • 1 small red onion
  • 1 handful white mushrooms ( we love mushrooms, so we used 10 of them )
  • Extra virgin olive oil
  • Salt & Pepper

If it is easy to use a BBQ to grill the veggies, so go for it 🙂 If not, you can still grill everything with a grill pan!

Okay, so start with cleaning the salad and put it in the fridge until you add the rest.

Cut all the veggies according to your taste. As you can see on the picture, I cut them into big pieces.

Then take olive oil, pour over pour all veggies and start grilling them first!

For the recipe, one of the hints that I can give is to grill the cheese at the end. When the cheese is little bit cold, it becomes hard, chewy… Personally I prefer to eat when it is just right out of the grill!

Take a salad bowl, add all grilled veggies and arugula salad , then warm cheese. Take olive oil, pour over the salad. Add some salt and adjust the tasting according to your preference.
