My Mom’s Zucchini Stew Recipe


This is another recipe that I’ve learned from my mom… For me Zucchini Stew an absolute dinner for spring or summer nights. It is very light and very tasty, a perfect recipe for everyday meal.

Dill is a very important ingredients for this dish, if you cant find it you can also replace it with dried / fresh mint.



  • 4 Zucchinis
  • 1 medium onion (chopped)
  • 1 cube of sugar
  • 1 garlic clove ( chopped)
  • 1 table spoon of rice
  • 1 table spoon of tomato paste or 3 table spoon of tomato sauce
  • 2 table spoon of olive oil
  • 1 1/2 cups of water
  • Salt & pepper
  • Some Dill to decorate

Cooking Time:  5 min to cut the vegetables, 20 mins to cook

Level: Easy,  for 2 – 4 person

Clean the zucchinis and cut them into medium cubes.

Take a large sauce pan first add onions and olive oil and Just stir them for 10 secs. then add zucchinis, rice, sugar, water, tomato sauce and garlic. Bring all to a boil over a medium heat. Then reduce the heat and let simmer for about 15 mins. If the vegetables are tender, then turn off the heat.

Serve this dish with freshly chopped dill.
