One of the delights of spring is asparagus for me! As we can easily find asparagus in Zurich, today I’ve prepared this delicious and easy pie for lunch. The taste was amazing and very light.
- 1 pocket of ready to use salty pie pastry ( I bought it from coop )
- 10 Asparagus
- 2 eggs
- Grated gruyere cheese, for this recipe i’ve used 5 tablespoon
- 2dl of liquid fresh cream
- Salt & pepper
Cooking Time: 15 mins for asparagus preparation and 25 mins for baking
Level: Easy, for 4 person
Preheat the oven to 220C. As this is a pie, I used the fan option and also heated the bottom of the oven.
First start by preparing your asparagus. If you dont know how to peel the asparagus 🙂 I recommend you to watch this video.
Take a deep pan and start boiling the water. Once the water is ready, then add your asparagus and boil it for 10 mins.
After 10 mins, place all the asparagus on a kitchen towel and let it dry 2-3 seconds.
Now we need to prepare the filling.
Take a bowl and whisk 2 eggs, 1 table spoon of gruyere cheese and cream. Put them aside.
Then, take your pie pan and place the pastry, curl the corners with your hands. Take a fork and make some holes onto it. ( see the picture below). Add 4 tablespoon of grated grueyere cheese onto the pastry.
Pour the cream mixture evenly on the top of your pastry and add place the asparagus according to your wish.
Bake the pie in a preheated oven until the pie has browned. In my oven it took me 25 mins, and this can change according to oven as well. Don’t forget to check the pie after 20th minute 🙂
