Roasted Red Pepper & Tomato Soup


Every time we try to cook something new and this recipe is one of them! You can prepare this delicious healthy soup in 30 mins! Who can say no to this?? Not me 🙂


Cooking Time: 30 mins

Level: Easy – serves 4


  • 3 big tomatoes
  • 1 medium onion
  • 4 red peppers ( the long ones)
  • 1 garlic clove
  • 2 cups of bio tomato sauce
  • 1 tablespoon of flour
  • 3 cups of water
  • 1 teaspoon of paprika
  • 1 tablespoon of olive oil
  • Salt & pepper

Heat oven’s grill to 180 C.

Cut all the vegetables in to big & thick circles. Place them on a baking paper and roast them until tender and beginning to turn golden.

Take a medium pan, add the roasted onions and olive oil. Stir them for 2 mins. Add the flour and turn in for about 1 min and pour over the tomato sauce, water, paprika and the other roasted veggies. Bring all to the boil, then simmer for 5 mins.

Purée the soup with a stick blender until very smooth.

I served this soup with a slice of goat cheese 🙂 the taste was excellent. This is a tasty soup rich in Vitamin C.
