My Delicious Spring Salad

If you follow my posts, you know that i love creating new recipes and combining different flavours… This time i wanted to prepare something fresh but at the same time a warm spring salad. And this recipe came up to my mind, so this is a fresh new recipe for a lovely spring nights!

Ingredients:

  • 150 gr asparagus
  • 1 cup of snow peas ( i used a canned peas)
  • 2 medium potatoes

For the sauce:

  • 3 tablespoon of balsamic vinegar
  • 1 tablespoon of olive oil
  • 1 teaspoon of Dijon mustard

Cooking Time: 15 mins

Level: Easy

First of all, peel away the tough outer layer with a vegetable peeler.

Cut them into medium pieces ( see the photo above)

Then, clean and cut the potatoes into very thin slices ( here i used my new spiral vegetable slicer and it worked well)

Take a pan and start boiling a water. First boil the potatoes for 4 mins. Then strain it and add asparagus. Boil it for 3 mins ( shouldn’t be very long).

Take a pan or a grill, add little bit olive oil and grill asparagus & potatoes for 3-4 mins until they become little bit brown.

Then add all the grilled veggies and snow peas into a salad bowl and serve it with the mustard vinaigrette.

  1. I just made a dish with Gruyer cheese from Switzerland. So amazing but 12.oo for an 8 0z. chunk in the US. Very expensive in the States!

    1. Hi Ann 🙂 Glad that you tried the recipe! Instead of Gruyere cheese you can also use parmesan cheese. I know that swiss cheese can be very expensive out of the country 😦
