Sweet Potato Soup with Kaffir Lime Leaves

This is a new recipe actually I was craving a soup and i had only sweet potatoes, onions and kafir lime at home… So I tried to cook something totally experiential 🙂 As the result was good, i wanted to share with you all.

Enjoy it!

  • 1 big sweet potato, peeled and chopped into cubes
  • 1 medium onion, chopped
  • 1 small garlic clove
  • 1 vegetable bouillon cube
  • Pinch of ginger powder
  • 1-2 small kaffir lime leaves
  • 2 cups of water
  • 1 Tablespoon of olive oil
  • Salt&Pepper

Cooking Time: 20 mins

Level: Easy – 2-3 person

Take a deep pan, add chopped onions, garlic potatoes and olive oil. Cook them until the onions are soft. Then add vegetable cube, water, ginger and kafir limes inside. Turn the heat to a medium level and let it cook 15 mins. Once the potatoes are soft, mix the soup with a blender and serve it warm.  ( If you see that your soup is little thick, you can add little bit of water)

Serve this soup with some homemade croutons 🙂

Bon Appétit!
