As you all know, I love using lentils in my recipes. This time I used them in a pilaf recipe which is from my mum’s kitchen… Very tasty and easy to prepare. I suggest you to serve it with some grilled chicken as a dinner!

Level: Easy – 3-4 people
- 1 cups of baldo rice ( not a jasmin for this recipe)
- 2 cups of water
- Half cup of boiled lentils
- 1 medium chopped onion
- 1 teaspoon of black pepper
- 1 teaspoon of dried mint
- 1 teaspoon of Salt – please add it according to your taste
- 2 tablespoon of Olive oil
Wash the rice – what i mean from here is rince the rice under cold water 2-3 times.
Take a pan, add olive oil and onions and stir them for 2-3 mins until the onions become soft.
Then add the rice and the water, bring it to boil and then lower the heat. Let it cook until there is no water. I always check the rice, if the rice is still hard and needs more water, add only HOT water and always keep it covered. Once the rice is done and still hot add the mint, salt, pepper and the boiled lentils inside and let it rest.
I suggest to serve it with meat or chicken 🙂
