Quinoa Salad with Rucola, Red Beetroot and Goat Cheese

This is a new recipe that I recently invented 🙂 It’s fresh, healthy and contains so many vitamins that we need in cold days.

Enjoy it!

Cooking Time: 20 mins

Level: Easy  – serves 2 – 4

Ingredients:

  • 1 cup of Quinoa
  • 2 cup of water
  • Some cucumber
  • Homemade beetroot pickles. For the recipe click here.
  • 4-5 small radish
  • Goat cheese ( add it according to your taste)
  • Some rucola
  • Salt & Pepper

For Dressing:

  • 1 teaspoon of mustard
  • 2 table spoon of apple vinegar
  • 1 tablespoon of olive oil

Take a sauce pan, add quinoa, water and little bit of salt. Bring it to a boil and reduce the heat to low, cover the sauce pan and cook it for 15 mins.

Keep you eye on the sauce pan and I usually taste after 10 mins. If the quinoa is still hard, I add little bit of hot water and let it cook for a while.

Once the quinoa is cooked, let it cool down.

On the other side, cut all the veggies into medium pieces.

Mix quinoa and all the veggies in a bowl. Decorated with some goat cheese. Finalise the salad with mustard, apple vinegar and olive oil dressing.
