Have you ever tried financier before? This is a delicious almond cake recipe from french cuisine.
It’s very easy to bake and a good option for breakfast or for your tea times.
I found this recipe from Christophe Michalak’s book – who is a very known french baker – and i will definitely bake it again 🙂
Cooking Time: Prep; 10 mins & 12 hrs in fridge Cooking; 15 mins.
- 120gr butter
- 10gr honey
- 45gr flour
- 120gr powdered sugar
- 45gr almond meal
- 40gr Fleur d’oranger ( i couldnt finf this one in zurich. Instead of this you can use almond extract)
- Pinch of baking powder
- 3 egg whites
In the original recipe, they advice to keep the dough 24hrs in the fridge. I only reserved 12 hrs and the taste was delicious too 🙂
Okay, so let’s start with butter.
Take a little sauce pan and melt the butter. Once it is melted, add the honey and cook it until it becomes little bit brown. Make sure that you don’t burn the butter! Let this cool down and continue with the dough.
Take a large mixing bowl, measure the sugar, almond, baking powder, flour and almond meal. Mix them with a spoon. Then add butter, almond extract and egg whites. Mix all the ingredients until you obtain a smooth paste.
Keep this paste during 12hrs in the fridge.
Preheat the oven to 180 C.
Fill the mould with the paste. ( If you are using a silicone mould, don’t grease it however if you use a metal mould, then grease it)
Bake your delicious financiers for 12- 15 mins. And voila!
