Quinoa Salad with Caramelised Onions and Grilled Brussel Sprouts


This is a new recipe that i recently invented 🙂 Normally i hate Brussel Sprouts… but recipe turned out a very delicious one and i decided to add to my blog! Hope you enjoy it guys and if you have any creative Brussel sprout recipes, please share it with us 🙂


Cooking Time: 20 mins

Level: Easy  – serves 2


  • 1 cup of Quinoa
  • 2 cup of water
  • 10-15 Brussel sprouts ( you can add more / less according to your taste)
  • 1 medium onion
  • 2 table spoon of balsamic vinegar
  • 1 table spoon of olive oil
  • Salt & Pepper

For Dressing:

  • 1 teaspoon of mustard
  • 1 tablespoon of olive oil

Take a sauce pan, add quinoa, water and little bit of salt. Bring it to a boil and reduce the heat to low, cover the sauce pan and cook it for 15 mins.

Keep you eye on the sauce pan and I usually taste after 10 mins. If the quinoa is still hard, I add little bit of hot water and let it cook for a while.

Once the quinoa is cooked, continue with Brussel sprouts. Clean and cut the them into two. Take a pan, add little bit of olive oil and grill the sprouts for 3-4 mins. Place them in a bowl and continue with onions.

Take the pan again, add chopped onions and olive oil. Stir them until they change the colour. Then add the balsamic vinegar and cook it until the onions are caramelised.

Mix quinoa, Brussel sprouts and onions in a bowl and serve it warm. Finalise the salad with mustard and olive oil dressing.
