Pickled Beetroot

Homemade is always great and healthy! I remember that we had a neighbour and every autumn he was preparing some delicious pickles for us! The taste, the flavour was always great!

This time it’s my turn to prepare some pickles at home. If you are ready, here is the recipe that i found from an old cooking book and the recipe worked very well! Now every month I pickle some new beetroots at home:)

Enjoy it!

Cooking Time: 20 mins

Level: Easy

  • 1 kg of beetroot ( bio if possible)
  • 1 cup of water
  • 1 cup of vinegar ( good quality of vinegar)
  • 1 big garlic clove –  i always  put little bit more 🙂 –
  • 1 teaspoon of salt
  • Clean the beetroots and don’t peel them.

Place the beetroots in a sauce pan and cover them with a water. Let it cook until they boil ( around 15 mins).

Turn off the heat and pour off the water. Let your beetroots cool down a little bit and peel them. Once the beetroots are little bit warm, cut them according to your preference. I prefer to cut them into small cubes.

Take a big and clean jar and place your beetroots inside.

In an another place, crush the garlic with salt. Add garlic & salt & water & vinegar into your jar. Reserve this pickle in your kitchen during one day and from the second day you can start to eat it.

After the first day, i place the pickle in my fridge and i use it for salads!

Enjoy it!
