Lentil Soup with Dried Mint and Orzo

This is another good recipe to warm you during cold Zurich days 🙂 I used to eat this soup in Istanbul a lot and most probably this is a known recipe in middle eastern cuisine as well! So if you want to try something delicious, this can be a good idea!  Even one portion of this soup can be enough for a dinner!

Enjoy it!

Cooking Time: 20 mins

Level: Easy

  • 1/2 cup of green lentils
  • 1 little onion ( chopped into cubes)
  • 1 litre of meat bouillon
  • 2 table spoon of onion
  • 2 tablespoon of orzo pasta ( https://en.wikipedia.org/wiki/Orzo_(pasta))
  • 2 tablespoon of olive oil
  • 1 tablespoon of dried mint

First, boil the lentils during 6 mins until they are half cooked. Once it is ready, strain it and put it aside.

Brown the onions in a cooking pan and then add flour and mix it during 1 mins. Then add, 1 litre of meat bouillon, lentils, orzo and dried mint. Let it cook 15 mins. Taste the soup and add salt & pepper according to your taste.

I prefer to add dried chillies and lots of dried mint 🙂

Enjoy it.
