If one day i have a little restaurant ( dreams.. dreams…) I will call it “The Eggplant” 🙂
Anyways… Tonight i wanted to cook something different and I came with this delicious idea! Ready to know the details? Then, let’s start!
- 2 big eggplant
- 1 onion
- 1 garlic clove
- 300gr minced meat
- 1/4 cups of breadcrumbs
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
- Fresh or canned Tomato sauce
- Extra Virgin Oil
Cooking Time: 40 mins
Level: Easy, for 2 person
Start cutting the eggplants in long and thin slices. Preheat the oven to 200 C and grill the eggplants slices during 12 mins ( 6 mins each side).
While the eggplants are in the grill, start to prepare the meatballs. Take a bowl and add minced meat, grated onions and garlic and breadcrumbs. Season it with cumin, salt and black pepper. Start to knead and squeeze the meat and let it cool during 15 min in the fridge.
Take a slice of grilled eggplant and place little bit of meat inside. then roll it like in the picture. Place all the rolls in a baking dish and top it with tomato sauce. Cook it in a fan option with 200 C during 30 mins.
You may add cheese on the top but i prefer to eat it simple 🙂
