When we invite our friends for dinner, we always start with apéro and i love to prepare some delicious finger food! This recipe is an ideal one that everyone will love it and you will keep cooking overtime! 🙂
- 1 pocket of ready to use puff pastry
- 1 big eggplant
- 1 big tomato – chopped into cubes
- Dried mint & basil
- 2 tablespoon of extra virgin olive oil
- 1 medium garlic cloves
- 1 dessertspoon of paprika
- Salt & pepper
Cooking Time: 20 min
Level: Easy, for 4 person
Preheat the oven to 200C.
Clean the eggplant, garlic and cut it in to small cubes.
Take a pan and then start to stir garlic, eggplant with olive oil in a low medium heat ( during 15 mins).
Then add spices & chopped tomatoes into the pan and let them stir 5 mins. Turn the heat down and let the mixture cool.
Take the puff pastry and cut it into square shapes ( I used my round and square cookie cutters) and cook them in the oven during 15 mins until they become puffy.
Once the pastry is cooked and cooled down, carve the top of the pastries as shown in the picture below. Start filling the small pastries with eggplant mixture and serve it cold or hot for your guests.
