Roasted Carrot Puree with Cumin and Roasted Radish 


This is a new recipe that I currently invented 🙂 I say invented because i had some ingredients in front of me and I had no idea to do with them.. I start roasting the ingredients and then this delicious recipe came up!

It’s a good one to try when you want to surprise your guests 🙂

  • 8 carrots – I used red, orange and yellow carrots they give a good taste to this recipe
  • 1 coffespoon of grounded cumin
  • 3 tablespoon of milk or cream
  • 1 tablespoon of olive oil
  • Salt & Pepper
  • Bunch of small radish
  • 1 cup of frozen sweet peas
  • Salt & Pepper

Cooking Time: 30 mins

Level: Easy, 4 Person

Preheat the oven to 220 C.

Clean and cut all the carrots into large slices. Place them onto baking paper, season it with salt and pepper. Let them roast during 15 to 20 mins.

Do the same thing with radish and sweet peas, roast them until they become smooth.

Once the carrots are roasted, put them into the food processor, add milk, olive oil and cumin.( add the milk carefully. We dont want your puree to become too juicy). Process it until it becomes smooth!

As you can see from the picture, this recipe goes very well with a steak. Once everything is ready you can serve the puree and the roasted radish as a side dish. It’s amazing that radish tastes less bitter and everyone will love it!
