I love to learn and discover new recipes from my friends! Lately I learned a very tasty way of cooking rice from a Mexican friend and I combined this rice with curry chicken! It was amazing and very tasty!
So here is teh recipe! Hope you try it at home guys. Don’t forget that homemade food is always but always the best one! 🙂
- 1 cup of baldo rice
- 1 medium onion
- 2 cups of water
- 1 cup of sweetcorn
- 1 cup of peas
- Bunch of coriander
- 1/2 cups of tomato paste ( we used migros tomato sauce with herbs – if you don’t find it you may use another tomato paste)
- 1 table spoon of butter
- Salt & pepper
- 300 gr of chicken breast ( cut in to small pieces)
- 2 tablespoon of olive oil
- 1 table spoon of curry powder
- 1 cup of plain yogurt
- Some dried mint
Cooking Time: 30 mins
Level: Medium 3-4 person
We start with rice, but first chop onion, garlic and coriander. Put them aside, we will use them with rice.
Take a pan and add butter + onions+ rice, stir them in a low heat until the onions become brown ( app.3-4mins).
Add tomatoes,sweetcorn, peas and coriander into the rice. Stir them during 1-2 mins and pour the water, add some walt and pepper.
Bring the mixture to a boil, then reduce the heat to low. The important thing is you should cover the pan tight and let the rice cook until 15 min. Don’t forget to check the rice, if after 15 mins your rice is still hard and there is no water left.. then add some HOT water and let it cook until the rice is tender.
Once the rice is cooked, then add some coriander and chili pepper. Rice is ready to serve!
Let’s prepare the chicken.
Cut the chicken into small pieces.
Stir the chicken with olive oil until the chicken becomes tender. Then add the curry powder and let it cook until 5mins.
Serve the chicken with the rice and yogurt as shown in the picture 🙂
