Cauliflower Salad with Curry and Sweet Potatoes

IMG_3037Today was the one these days that I felt that I should create something new.. a new flavour that turns a simple recipe to something special and tasty!

I took a glance at our fridge and there were only some sweet potatoes, cauliflower and lime! At that moment a new recipe came up to my mind andΒ  I decided to cook something different for dinner!

This salad is totally invented due to my senses πŸ™‚ I mixed different spices and flavours andΒ  the result was extra amazing and we felt in love with this salad!

It’s a perfect blend of sweet, sour and chilli! Try it, and I am sure you will love it!

Ingredients:

1 Medium Cauliflower

1 Medium onion

1 long sweet potatoes

Half of a lime juice

Olive Oil

Dried Chilli

1 tablespoon of curry powder

1 tablespoon of Mustard Γ  l’ancien ( grained mustard)

1 teaspoon grounded cumin

Salt & pepper

Special Vinaigrette SauceΒ 

For this vinaigrette, it’s quite difficult to give the exact proportions but i will do my best πŸ™‚ The important is that you can have chilli, lime and cumin taste separately in the sauce.

Mix lime juice, cumin, mustard, salt, pepper and chilli, olive oil in a bowl. Taste it and add some more spices if needed.

Cooking Time: 35 min.

Level: Easy Β  3-4 person

Start pre-heating your oven to 220 C – we will use the grill option!

Chop the onion and the cauliflower in to small cubes. Take a pan and stir them with olive oil until they become soft. Then add the curry and let them to stir 5 min in a medium heat.

Cut the sweet potatoes into small cubes and place them onto the baking paper. Place the cauliflower mix next to sweet potatoes and grill them during 25 – 30 mins! Grill them until they become crunchy!

Once the vegetables are cooked, Place them in a bowl and season it with our special vinaigrette sauce!

This salad will change the way that you eat the cauliflowers! It has a special taste with lime, chilli and cumin! At the end of our dinner, we were sad that we had no salad left πŸ™‚
