Pumpkin Soup with Coconut Milk


Pumpkin and Coconut go very well together. This year I used Pumpkin in different recipes: Soup, dip sauce and every time i was very happy with the solution 🙂 Pumpkin soup with coconut will be my favourite for sure! It’s tasty, healthy and a great idea for cold winter days!

300gr of Pumpkin – chopped in to cubes

1 medium onion

1 garlic clove

250 gr of coconut milk – I use this one

1 glass of milk

Pinch of cinnamon

1 teaspoon of curry ( If you dont like curry, you can add less)

2 Tablespoon of olive oil



Cooking Time: 40 mins

Level: Easy – 5 person

Start boiling or steaming the pumpkins. Normally I use our steamer and it’s much healthier that boiling.

Meanwhile, chop the onions and garlic. Cook them in a big cooking pan with olive oil until they become roasted. Add pumpkins to this mixture with cinnamon and curry. Stir them during 2-3 mins and turn off the heat.

Take your food processor and blend pumpkin mixture in the pan. Once you have a smooth mixture, then add coconut milk and half of the milk to this mixture. Cook them in a medium heat until it boils. Taste the soup, if it needs more spices or more milk ( you can add some water also).

Serve this soup with some homemade croutons 🙂
