Roll, roll, roll… I love rolling veggies and filling them with different flavours. This time with my husband we tried something new and we did eggplant rolls that at the end we found ourselves in heaven 🙂 As like my other recipes, this one is also very easy to prepare and good for as a finger food or side dish.
2 big and long eggplant
100 gr feta cheese
Fresh Basil leaves
10 Dried tomatoes
Salt and Pepper
Cooking Time: 10 mins
Level: Easy – 4 person
First, preheat your oven’s grill to 250C.
Cut the eggplants into long slices, be sure that you have thick slices. Season every slice with olive oil, salt &pepper. Grill each side during 3 mins until the eggplant becomes soft.
Once the eggplants are ready, place one basil leave, feta and dried tomatoes onto the eggplant and roll them carefully. I used some toothpicks to strength the rolls 🙂 You can serve this dish cool and hot. If you want more flavour, at the end you may season it with balsamic vinegar.
