I like noodles and love to use them in soup and salads. This time I am going to share a delicious noodle salad recipe that you can easily make it in 10 mins. This can be a good idea for a lunch. Enjoy it!
Half packet of Noodle from Migros. Normally I use this one and it is good.
10 Cucumber Pickles ( It depends to your preference, you can add more or less)
5 Dried Tomatoes – For that I use the one in Alnatura.
100 gr Boiled Lentils
1 tablespoon mustard
Half of a Lemon Juice
Salt & Pepper
Cooking Time: 15 min.
Level: Easy – serves 2 person
The first step is the boil the lentils during 8-10 mins with a cold water. Cooking lentils is quite important because if you boil them too long, then they can become very smooth and thus is not what we want for this salad. Normally what I do is to try lentils every 5 mins and if they are still hard I cook them little bit more. If you don’t have any time, then use canned lentils.
Once the lentils are cooked , drain them and put a side to cool.
Start preparing the noodles as shown on the packet – boil them during 3 mins and then drain them. Take a bowl and mix lentils and noodles with olive oil. Let them to cool down for 10 min in the fridge and continue to prepare the other ingredients.
Cut the pickles and tomatoes into small cubes ( I love cutting everything into small cubes).
Take your noodles and mix them with the vegetables.
To season this salad I use this dressing sauce:
Whip olive oil, mustard and lemon juice. Add some salt and pepper into it. Yes, That’s it… Taste your sauce if it needs more ingredients add some, mix with your salad.
You can eat this salad cold and hot but I prefer when it is cold 🙂
