When I was looking for some Thanksgiving food ideas, I found this one from Smittenkitchen and they that turned our night a feast!

Ingredients for 4 people
2 long sweet potatoes
Goat Cheese – 2 tablespoon
Fresh coriander, just a little bit
1 Fresh yellow pepper
1 celery stalk
Olive Oil and Balsamic
Salt & pepper
Preheat the oven to 200C.
Clean the sweet potatoes and cut them in to thick circles. Place them into your oven tray and cook each side about 5 mins ( they have to become brown and smooth).
While the potatoes are cooking prepare the topping.
Cut the peppers, coriander, cranberries and celery into very small pieces. Add goat cheese to this mix.
Place your cooked sweet potatoes into plate and place the goat cheese topping onto every sweet potato. Finish it by seasoning with olive oil and balsamic vinegar.
This dish can be a very good side side or appetiser. Enjoy it!
