Grilled Eggplant Salad

 

If you ask me what is my favorite dish to cook, I answer: Eggplant.. Everything with eggplant 🙂 Especially in the summer time, when we do BBQ I prefer to prepare this delicious eggplant salad. This salad can be a nice side dish or a dip but anyways you will love it!

Ingredients for 4 people:

  • 4 big eggplants ( in Zurich I try to buy eggplants from Turkish markets,in my opinion they taste much better than the others.)
  • 2 medium red onions
  • 2 tomatoes
  •  2 big red peppers
  • 2 garlic clove
  • 1 can of corn
  • Bunch of parsley
  • 2 tablespoons of Olive oil
  • Lemon Juice
  • Salt & Pepper

Cooking Time: 40 mins ( to grill all the vegetables)

Level: Medium – 4 person

If you have a possibility to grill in BBQ this salad becomes more delicious! But no worries, if you don’t have this opportunity then turn on your oven and start to grill eggplants and peppers until they become smooth & crispy. Once this is done, then clean their skin, and cut them into small pieces. Cut the tomatoes, red onions, corn garlic and parsley into small cubes, mix them with the peppers and eggplants.

Your salad is almost ready. Mix all the ingredients, taste it, then add olive oil and salt according to your taste. If you want you can add origin or fresh coriander to this salad. The important is that you should serve this salad cold.
